Whole Wheat Artichoke Pizza {21 Day Fix, Weight Watchers}
A few notes about this heaping crust of goodness:
Pizza is hard to mess up. You can make any substitutions you see fit for this recipe. If you don’t have feta, parmesan is also a great choice!
This recipe is for two pizzas, but you can double or halve this recipe no problem!
You’ll have leftover artichoke hearts that you’ll probably want to use up during the week (and black olives, too) – here are some recipes that also use artichoke hearts so you can plan accordingly (ooooooh, artichoke week sounds like a good idea to me!):

Here are the ingredients for this yummy artichoke heart-inspired pizza (I love all the colors…honestly, it seemed like a lot of work to cut up just a little but of onion for this recipe but it ended up being worth it AND it makes my pizza look like a rainbow):
- Whole wheat pita bread
- Artichoke hearts
- Tomato
- Onion
- Black Olives
- Basil
- Mozzarella
- Feta
- Olive Oil
- Balsamic
So basically, a bunch of my favorite flavors piled high on a chewy but crispy pita bread with cheese and oil…what’s not to love?

Whole Wheat Artichoke Heart, Black Olives & Feta Pizza
Ingredients
- 2 whole wheat pita
- 1 tsp olive oil
- 4 artichoke hearts pulled apart
- 4 tbsp black olives sliced
- 1 tomato sliced
- 1/8 c onion sliced
- 4 tbsp low-fat mozzarella grated
- 2 tbsp feta crumbled
- 4 basil leaves
- 2 tsp balsamic
Instructions
- Heat oven to 425.
- Spread 1/2 tsp olive oil over each whole wheat pita bread. Top each pita bread with cheese (half the mozzarella, half the feta), tomato slices, black olives, artichoke hearts, and onion. Drizzle balsamic vinaigrette over the top. You can add the basil now or add it after the pizza has cooked, it's your preference.
- Cook for 6-8 minutes, until cheese starts to brown a little on the edges.

I hope y’all enjoy this flavor combo as much as I do. I’ll be eating this all week as this gives me a great excuse to eat up my artichoke hearts and black olives. Oh, and side note – you can freeze any leftover pita bread you have!
