Don’t you ever just wish you had a giant stack of Trader Joe’s Cookie Butter Cookies sitting in front of you? Meeee toooooo! That’s what inspired this Cookie Butter Cookies recipe – my need for cookies made from butter made from cookies. Turns out these are a welcome addition to my Trader Joe’s Week Meal Plan menu, because we all need some cookies in our lives!

Trader Joe’s Cookie Butter Cookies

Before we get to this cookie recipe, let me introduce you to Trader Joe’s Week (if you’re a TJ’s Week newbie). I’ve put together a collection of 7 dinner recipes using some of Trader Joe’s most-loved items (like Cookie Butter, obviously). Then, I put all of these recipes together in a printable meal plan with grocery list.

You can find all of the TJ’s recipes here. If you don’t see many things there yet, that’s just because you got here early in the week before they were all published!

If you don’t have a TJ’s near you, I’ve got substitutions for every TJ’s product so you can still make these recipes. Also, I’ve got lots of other grocery store-themed meal plans coming up, including Sprout’s, Aldi, and Target (let me know if you have a store you’d like to see!).

Now let’s get to these cookies, which are a cookie-within-a-cookie Inception-like dream of delicious dessert-y-ness. If that didn’t make sense, it’s okay, I’m just saying these cookies are legit.

What can I use instead of Trader Joe’s Cookie Butter?

If you don’t have a TJ’s near you, I’m sorry! I went for years without one, waiting patiently until TJ’s came to Texas. I missed it dearly, as I grew up in California and there as always one nearby. Even today, I have to drive about 25 minutes to get to one, which means I don’t go as often as I like.

If you don’t have a Trader Joe’s but want to make these cookies, you can substitute the Cookie Butter for Biscoff Spread. I believe Biscoff Cookie Butter was actually around long before TJ’s version. You can find it in most grocery stores or order from Amazon. 

Can I use chunky Cookie Butter for this recipe?

I haven’t tried it with chunky cookie butter. I think you could, but we loved the chewy texture of these cookies and if you have a choice, I’d say go with creamy (but if you make them with chunky and they’re amazing, please let me know so I can update here!).

This recipe is perfect for: holidays, parties, making all the neighborhood kids happy (at least, that was the case here), and Everyday Cookie Eating. So bascially, these cookies are perfect for everything.

Trader Joe's Cookie Butter Cookies

These chewy Trader Joe's Cookie Butter Cookies are amazing and super easy to make!

Ingredients
  

  • 1 stick butter room temperature
  • 1/2 c cookie butter
  • 1/2 c light brown sugar
  • 1/2 c sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 1/4 c all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350 degrees.
  • Prepare baking sheets with parchment paper.
  • Cream butter, cookie butter, light brown sugar and sugar with mixer.
  • Add egg and vanilla and mix well.
  • Combine flour, baking soda and salt and whisk to mix together.
  • Add flour mixture to cookie butter mixture and stir until just blended.
  • Bake 12-14 minutes until cookies start to get a little golden around the edges. Bring them out of the oven a little earlier than you think necessary for a chewy cookie. If you leave them in until the edges look golden brown and crispy, the cookies will be crispier.

Notes

This recipe makes 2 dozen cookies, unless you make them jumbo sized, like I did (the ones you see pictured here come from a batch of 18). You can double this recipe.

Did you know about the Trader Joe’s hidden stuffed animal?

A quick note while I’m talking Trader Joe’s – did you know that every (almost every) store has a “hidden” stuffed animal? This is basically the only way I get my eight-year-old to go grocery shopping with me. She looks for the stuffed animal and lets the cashier know – they give kids who find it a lollipop! Bonus at our store, they never move it. lol.

Did you see in #6 of the instructions that it says peanut butter instead of cookie butter?

#3 of instructions says “peanut” butter not cookie butter.

Yummy! Can I do these as a slice&bake?
