This tasty shrimp skewer recipe is perfect for outdoor grilling. It’s packed with flavors but also really easy to throw together (I bet you have most of the ingredients for this marinade around the house already). I made sure to use ingredients that we’ve been able to easily find at our local grocery store. We used Mazola Corn Oil for the marinade – Mazola has a high smoke point (450˚ F), which makes it nice great for grilling at high temperatures.

This recipe makes six skewers full of shrimp and veggies. You could eat them right off the skewers or serve over rice (yum!). If you have any leftovers, serve over a salad the next day.

Shrimp Marinade Tips

Listen up, because I have an Important Shrimp Fact for you.

When I was creating this marinade, I really wanted it to include lime. However, citrus can actually cook your shrimp. You have to be careful when you’re making a shrimp marinade with citrus, because if you leave it to marinate for too long, you’ll end up with overdone shrimp. I decided to add the lime once the skewers were complete, because I am the kind of person who will leave the shrimp to marinate for too long.

You can make this marinade in advance. Just be sure to stir it up before adding your shrimp.

We let the shrimp marinate in a covered bowl in the fridge. You could also use a plastic baggie.

Shrimp Skewers Tip

It can be tricky to flip the shrimp skewers over on the barbecue. If you have enough skewers, use two skewers for each kabob. If you don’t have metal skewers, you can use wooden skewers, but be sure to soak them in water first for 10-30 minutes so they don’t burn.

Here are the ingredients you’ll need for this Spicy Garlic Lime Shrimp Skewers Marinade:

3 tablespoons Mazola Corn Oil

2 tablespoons honey

1/2 tablespoon garlic powder

1 teaspoon red pepper flakes

salt and pepper, to taste

Additionally, you’ll want to set aside about 1-2 teaspoons of Mazola Corn Oil and some salt and pepper to season your vegetables.

You will also want one lime and about two tablespoons of finely chopped cilantro to add once the shrimp is cooked!

This marinade has some kick (hello, red pepper flakes!). If you’d like to tone it down, you can cut the red pepper flakes down to 1/2 a teaspoon.

How to make Spicy Garlic Lime Shrimp Marinade

Combine all marinade ingredients in a bowl. Stir well. Pour over shrimp and toss lightly until shrimp are completely coated with the marinade. Cover and let sit in the fridge for 10-30 minutes. You can have them marinate while the grill is heating up and you’re prepping your veggies!

Ingredients
  

Shrimp & Veggies

  • 30 jumbo shrimp peeled and deveined
  • 1 red onion large, cut into 1" pieces
  • 1 red bell pepper large, cut into 1" pieces
  • 1 yellow bell pepper large, cut into 1" pieces
  • 1 green bell pepper large, cut into 1" pieces
  • 1 tsp Mazola Corn Oil
  • salt and pepper to taste

Marinade

  • 3 tbsp Mazola Corn Oil
  • 2 tbsp honey
  • 1/2 tbsp garlic powder
  • 1 tsp red pepper flakes
  • salt and pepper to taste

Toppings

  • 2 tbsps cilantro finely chopped
  • 1 lime cut into wedges

Instructions
 

  • In a medium bowl, whisk together Mazola Corn Oil, honey, garlic powder, salt and pepper, and red pepper flakes.
  • Add peeled and deveined shrimp to mixture. Lightly toss until all shrimp are covered in the mixture.
  • Cover and let marinate in the fridge for 10-30 minutes. Heat up the grill while the shrimp are marinating.
  • Cut up the onion and red bell peppers into 1" squares. In a bowl, toss with 1 teaspoon Mazola Corn Oil and salt and pepper, to taste.
  • After your shrimp are done marinating, add shrimp and veggies to your skewer. We did it in this order: shrimp, onion, red bell pepper, shrimp, yellow bell pepper, green bell pepper, and repeat until full. You'll have 5 shrimp on each skewer, and you'll start and end with a shrimp (this is just a guideline, you can mix it up!).
  • Once the grill is ready, grill over direct heat for 3-4 minutes per side. All grills vary so you'll want to keep an eye on these as they're grilling. Keep checking so they don't burn, but you'll definitely want some of that pretty char that comes from the grill!
  • Squeeze the juice from one lime wedge over the finished skewers. Use the remaining lime wedges to squeeze over the skewers as you eat them, if you'd like. Sprinkle with chopped cilantro. Enjoy!

Notes

Grill times can vary across different grills, so keep an eye on these as you're making them.
Weight Watchers Points (1 serving = 1 skewer)
Only about half of the marinade stays on the shrimp. However, when calculating these points the WW points calculator generates points for the entire recipe and doesn't take that into consideration. So I think you can safely deduct about 1 point from each skewer, but I wanted to present this exactly as the WW points calculator says!
