Roasted Broccoli Recipe

My plan for 2016 is to ROAST ALL THE VEGETABLES. I’m not even kidding. Roast them for lunch, roast them for dinner, roast them for everything. And roast them ALL. No vegetable is free from my roasting escapades, and that includes broccoli.

Roasted Broccoli RecipeI think that roasting is the easiest, best-tasting way prepare veggies. And because I’ve been eating a ton of veggies, easy and good is important.

This easy roasted broccoli recipe is both of those things – easy (shockingly so!) and delicious (crispy broccoli, yum).

It’s also SUPER healthy and only has three ingredients (and I have a couple of options for you – one with salt, and one without).

Ingredients for easy Roasted Broccoli Recipe:

  • Fresh broccoli (as much as you can eat, but remember that it will shrink up a bit in the oven…so when in doubt, go with a little extra). We buy a big bag of pre-cut broccoli from Costco, but I will also buy it fresh and cut myself.
  • Olive oil (to taste). I use this really cool olive oil sprayer to coat the broccoli – it’s WAY easier than brushing it on, and I am able to use a lot less oil but still coat the veggies evenly – seriously, we use this thing ALL the time)
  • Salt (to taste), OR another seasoning. If you’re on a salt-free diet (21 Day Fix, holla!), use granulated garlic (this is actually the exact granulated garlic I used to make these) or another salt-free seasoning (Costco has one that’s amazing)

How to make this roasted broccoli recipe:

Set your oven to broil. While your oven is heating up, spread the broccoli out evenly over a baking sheet. Spray lightly with olive oil and sprinkle with salt or garlic/seasoning of your choice.

Once the oven has heated all the way up, place the pan in the oven. You’ll have to watch it. My broccoli was done probably around 10 minutes after I put it in the oven. As soon as the ends start to get a little brown, you’re ready. Leave it in longer if you want it crispier – just be sure to WATCH IT, because it will go from not done to overdone in no time.

Honestly, I like it even crispier than it looks in these photos – but brown broccoli doesn’t photograph well. And this was still really, really good.

Have you tried adding lemon zest and red pepper flakes? I love the combination with lots of garlic!
