Tomatoes make my heart sing. I don’t know what it is, or when it happened (because I sure as heck did not like tomatoes when I was a kid), but the adult version of me literally writes “tomatoes” in her gratitude journal at least once a week. Hey – it’s the little things! And that tomato joy sparked this healthy bruschetta toast recipe that I have been making on a weekly basis.
BONUS: It’s 21 Day Fix-friendly and Weight Watchers approved (I’ll give you some options for keeping the points down below, because the Weight Watchers Freestyle plan uses lots of points for the cheese and toast in this recipe).
Healthy Bruschetta Toast
So – what is bruschetta, anyway?
Technically, bruschetta is a toasted bread with oil and toppings. This recipe really focuses on the topping – the tomatoes!
Can you have bruschetta on the 21 Day Fix?
Yes! Just make sure you’re using an approved bread (like whole wheat or the Ezekial I use in this recipe), and watch the oil – be sure to meaure out how much you’re using. And remember – oil goes a long way.
Can I you eat bruschetta on Weight Watchers?
Yes, and that is really the glory of Weight Watchers…you can eat whateve, but you’ve got to track it – and some foods require more points than other. On the Freestyle program they have more “zero points” foods than ever…but on the flip side, foods like bread and cheese might use more points than they did previously.
To make this a succesful snack or appetizer on Weight Watchers, really watch the serving sizes…or just eat the tomato topping in lettuce wraps, and skip out on most of the points altogether!
What is Ezekiel bread?
I used Ezekiel bread for this recipe. Not only is it super hearty and good for you, but it also holds up a little better than more traditional whole wheat bread. You’ll find Ezekiel bread in the refrigerated or even frozen section of your grocery store. Not all stores have it – you can find it at a store like Sprout’s or Whole Foods if you’re regular store doesn’t have it).
Another note about Ezekiel – if you’ve never had it before, it can taste a little…different. It’s a sprouted bread with many different grains in it.
Healthy Bruschetta Toast
Ingredients
- 2 c grape tomatoes diced
- 2 tsp balsamic vinaigrette
- 2 tsp extra virgin olive oil
- 1 tbsp fresh basil chopped
- 1 garlic clove diced or minced
- 1/2 c fresh mozzarella shredded, or sliced, part-skim
- 2 Ezekiel bread slices
Instructions
- Wash and dry your tomatoes. Cut into halves or quarters depending on your preference.
- In a medium bowl, lightly toss the tomatoes, olive oil, balsamic vinaigrette, basil, and garlic.
- If you have time, cover the bowl and let it sit in the fridge for a few hours for the flavors to really gel. If you don't have time, that's fine too - it will still be delicious!
- Toast your Ezekiel bread.
- OPTIONAL: If you have enough teaspoons or points alotted, brush the toast with a small amount of olive oil or butter. If not, skip this step!
- Cut the bread in half. Split the mozzarella up evenly across the pieces of bread (it should be about an ounce per piece of bread). Add 1/2 cup tomato topping to each slice. Enjoy!

While this is a great appetizer option, I actually like to eat it for lunch (and dinner, and breakfast).

This recipe really is SO easy to make…and it will keep in the fridge for 2-3 days, so you can snack on it for a couple days after you make it!
