After Claire was born, I asked my mother-in-law (Grammie) to please bring us a few dinners that we could eat in those hectic newborn days. You know – the days when you can’t put the baby down to go pee, let alone prepare a hot meal and eat with two hands. One of the meals we requested was her delicious Curry Chicken Broccoli casserole, because OMG…it’s so good. It always has been – and likely always will be – one of our favorite home-cooked Grammie specialties!

Tonight, I made that very dish. It was SO easy…and tasted exactly like Grammie’s version, which means it’s probably fool-proof (or I just got really lucky). 

I am adding this to my list of dinners for our meal planning rotation. If you are looking for something easy to make that’s a little bit different, but not weird…you will probably want to try this, too!

Easy Curry Chicken & Broccoli Casserole

This chicken casserole is easy to make - and the curry gives a unique twist to an otherwise typical casserole dish.

Ingredients
  

  • 4-5 chicken breasts
  • 1-2 cups cooked broccoli
  • 1 can cream of chicken soup
  • 1 small can evaporated milk
  • ½ cup of grated cheese cheddar – mild or medium
  • ½ teaspoon curry this could be increased depending upon your taste
  • 2/3 cup mayonnaise
  • 1 T. lemon juice
  • Optional: 3 slices of bread and butter for croutons
  • Optional: rice

Instructions
 

  • Cook chicken and cut into pieces. {Grammie says: I usually cook 4 or 5 chicken breasts (simmer for about 20 minutes). I have cooked a whole chicken and pulled the meat from the bone and used that.}
  • Cook and drain broccoli, and cut into pieces. Set aside.
  • Mix remaining ingredients in a bowl to create the sauce.
  • In a casserole dish, layer the broccoli, chicken, and then sauce.
  • Bake uncovered at 350 degrees for 25-30 minutes.
  • After removing from the oven, top with croutons made from the slices of bread sauted in butter.

Notes

We like to serve this over rice (yummm...). It's a definite comfort food, especially if you add the croutons and rice. If you want to keep it healthier, you can leave off the croutons and instead of rice, serve a salad on the side.

Looks yummy, and kudos to Grammie.

I googled chicken broccoli casserole and had to try this tonight. It was so good!
