Because PISTACHIOS. Also, cherries. I love cherries (these cherry banana muffins are a long-time favorite around here).

Cherry Pistachio Overnight Oats
I’m actually eating these as I write this. And while I sit here eating them, I’m thinking about all the little extra notes I want to give you guys about these oats (oats notes, ha).
I used quick oats to make these. Any oats will do. My actual preference is steel cut oats, but they have a chewier/heartier texture and don’t always absorb as much liquid, so keep that in mind if you’re need to that steel cut life.
Also, while I photographed these in adorable (and camera-friendly) mason jars, I always make them in plastic containers (we got ours at Costco, but here’s a whole post about meal prep containers). The mason jars are great for serving, but don’t really have enough room to make them in (unless you use a larger one). I like to stir and then shake them up before I put them in the fridge, and as you can see, there’s really not room in these serving-size jars.
So let me peel back the food blogger facade for a second and show you what these looked like before I transferred them to pretty jars and pretty lighting!
Another note: you can definitely prep these ahead of time! I usually make two servings. Some people will prep for longer, or even a week, but I really don’t like how soggy the oats start to get after a couple of days. And speaking of soggy, your pistachios will get soggy too…so I always add those at the last minute.
If you don’t like pistachios (gasp!!), almonds would make a great substitution.
Ingredients:
Oats
Greek yogurt
Almond milk
Frozen cherries
Pistachios
Honey
Cherry Pistachio Overnight Oats
Ingredients
- 1/3 c oats quick oats, rolled, or steel cut
- 1/4 c Greek yogurt lowfat
- 1/4 c almond milk unsweetened
- 1 tsp honey
- 1/2 c cherries frozen
- 1 tbsp pistachios shelled
Instructions
- In a small pan, heat your cherries over medium heat on the oven until thawed, stirring periodically (about 3-5 minutes). Set aside.
- In a container, combine oats, Greek yogurt, almond milk, and honey. Add cherries. Stir.
- Seal the container (if you have an airtight lid, I like to give them a good shake to make sure everything is mixed) and place in the fridge overnight.
- When ready to eat, add pistachios. Enjoy!
