I grew up thinking I hated cauliflower. Over the last few years, though, I’ve found lots of ways to love cauliflower. I’ve discovered it’s a super versatile veggie that has a place at the table for every meal of the day. And when you turn cauliflower into handy cauliflower “rice,” you have even more options. Today I’m sharing some favorite cauliflower rice recipes that you’ll want to add to the rotation ASAP!

What is cauliflower rice?
Cauliflower rice is grated cauliflower. It’s called cauliflower rice because when you grate a heard of cauliflower, it looks like rice! It doesn’t taste like rice (it tastes like cauliflower), but it can be used as a rice substitute in many recipes. That’s just the beginning, though – grated cauliflower can be used SO many ways.
Where do I find it at the store?
At Kroger or Walmart, I can find the cauliflower rice in two places – the produce section, and with the frozen vegetables.
How to make cauliflower rice at home
It’s also incredibly easy to make your own cauliflower rice at home. All you need is to wash a head of cauliflower, and then grate it with a grater. You can buy pre-made cauliflower rice at the store pretty inexpensively, and that’s usually what I do. But you can easily make it at home (in fact, I did this yesterday for some smoothies – and that’s what inspired this post today!).
You can also cut the head of cauliflower into chunks and use your food processor – so easy!
Can you freeze riced cauliflower?
Yep! I have a bag frozen in my fridge right now.
