Nothing quite says summer like watermelon. So juicy, fresh, and cool (that sounds like a song lyric, and yet also describes watermelon perfectly), even my kids are into it. I know you’re going to love this 21 Day Fix Watermelon Salad, which is the perfect combination of both refreshing and full of flavor. This recipe is also great for Ultimate Portion Fix and Weight Watchers (it’s only 2 points per serving!).

But first! Let me tell you a quick watermelon story.
21 Day Fix Watermelon Salad
When I was a kid growing up in Southern California, we’d stop at the strawberry stands on the side of the road to buy fresh strawberries and often watermelon and citrus fruits. One day, the stands owner, an old Mexican man, asked me if I’d like a treat. I said yes, because TREAT!
He grabbed a watermelon, picked just hours before, and chopped into it with a huge knife. Juice and seeds spilled out onto the wooden table as he defly sliced it up into bright red pieces. He grabbed a lemon, cut it in half, and squeezed it over a slice of watermelon. Then, he dipped it in salt and handed it to me.
Totally not what I was expecting, but I tried it anyway. My face still puckers at the memory of it! But also? It was kind of awesome.
And this recipe has a similar (yet sweeter) vibe. It reminds me of a Southern California afternoon.
This salad is the perfect side dish when you’re grilling. It’s also perfect for bringing to a party or a potluck, and the pretty red, white and blue colors make it festive for the 4th of July.
AND! It’s easy. SO easy, you guys.

Ingredients:
Watermelon & Feta Salad
Ingredients
- 8-10 cups watermelon diced
- 1/4 cup lime juice from 2-3 limes
- 2 tsp honey
- zest of 1 lime
- 1 pint blueberries
- 4 oz feta cheese
- 3-4 mint sprigs leaves torn
Instructions
- Whisk together lime juice, zest, and honey.
- Combine watermelon, blueberries, feta and mint, stir.
- Add lime juice dressing and stir to coat.
- Let chill in the fridge until you're ready to eat.

We are in a heatwave and eating watermelon is my favourite to hydrate myself. The salad looks really good. Watermelon to hydrate, blueberries for antioxidants and cheese for texture and taste. Would love to try it.

Oops! I totally left them out. Sorry about that! One serving size is one cup, and it’s equal to one purple and about half a blue. 🙂
