21 Day Fix Watermelon & Lime Salsa Fresca
This recipe is perfect for the season. It’s bursting with flavors and also a great way to use up watermelon. You can eat this alone or serve with tortilla chips. You can make your own Honey Wheat Tortilla Chips – or you might want to try this technique for making your own! Or, of course, you can grab a bag of your favorite chips at the store, too! I love an excuse to stock up on tortilla chips.
This recipe is great for parties. It’s 21 Day Fix and Weight Watchers-compliant. It’s also vegan.

Serving size: 3/4 cup
Ingredients for Watermelon Salsa
- Watermelon 3 cups chopped
- Lime ¼ juice
- Lime zest 1 ½ tsp
- Mango 1 peeled & diced
- Cucumber 1 peeled & diced
- Red onion 1 chopped
- Jalapeno 1 seeded & minced
- Basil Leaves 8 chopped
- Garlic Salt ½ tsp
- Tortilla chips – you can make your own Honey Wheat Tortilla Chips – or you might want to try this technique for making your own
How to make this Watermelon Salsa
Mix together lime juice & zest. Add the watermelon, mango, cucumber, jalapeno, onion and basil. Toss together. Add garlic salt. Chill until ready to serve.
Watermelon & Lime Salsa Fresca
Ingredients
- 3 c watermelon chopped
- 1/4 lime juiced
- 1 1/2 tsp lime zest
- 1 mango peeled and diced
- 1 cucumber peeled and diced
- 1 red onion chopped
- 1 jalapeno seeded and minced
- 8 basil leaves chopped
- 1/2 tsp garlic salt
Instructions
- Mix together lime juice & zest. Add the watermelon, mango, cucumber, jalapeno, onion and basil. Toss together. Add garlic salt. Chill until ready to serve.
