Cauliflower is a “new” vegetable to me. We rarely ate it when I was a kid because my mom didn’t like it. In fact, I remember her making it once and saying it was only because my dad liked it. It wasn’t until a couple of years ago that I even ventured to try it myself.
What I love about it is that it pretty much takes on the flavor of whatever you add to it. This Broccoli Cheese Cheddar soup from The Foodie and the Fix is one of my favorite recipes…it has tons of cauliflower in it, but you’d never even know!

The 21 Day Fix has taught me to eat more veggies and try new things (which is saying a lot for this picky eater!). Cauliflower is one of those things I’m not sure how I lived without!
This 21 Day Fix Spicy Roasted Cauliflower is really easy to make (be sure to check out my other favorite roasted veggie recipes at the bottom of this post…roasting your veggies really makes them extra amazing, and much easier to eat if you’re not a natural born veggie lover).
21 Day Fix Spicy Roasted Cauliflower

I actually don’t eat anything spicy (seems no amount of food reform can make me like spicy), but this recipe is really easy to adapt…just add the pepper flakes and pepper to half, and you’ll have a spicy version for the spicy lovers and a non-spicy (but still delicious) version for the rest of us.
Also, this makes great leftovers. Have it with a side of protein for dinner, and add the leftovers to a salad for lunch the next day!
Prep time: 5 minutes
Cook time: 25-27 minutes
Serves 4
Ingredients:
1 large head cauliflower, rinsed, dried, and separated into florets
2 T. extra virgin olive oil
2 t. crushed red pepper flakes
Salt and freshly ground black pepper, to taste
1/3 c. Parmesan cheese, freshly grated, divided
2 – 3 cloves garlic, peeled and finely minced
Preheat oven to 450˚F and line a large, rimmed baking sheet with parchment paper.
Add cauliflower florets, olive oil, minced garlic, and crushed red pepper flakes to a large bowl and toss to coat. Season with salt and pepper, to taste.
Spread seasoned cauliflower on prepared baking sheet in a single layer. Roast for 20-25 minutes at 450˚F, stirring once to ensure cauliflower cooks evenly.
Remove from oven and set the broiler to high. Evenly sprinkle cauliflower with ¼ cup freshly grated Parmesan cheese and place under the broiler until golden brown (approximately 2 minutes).
Remove from oven and sprinkle with remaining Parmesan cheese and serve immediately.
Super easy (and you can always toss in some other veggies while you’re at it…broccoli goes well with cauliflower!).
