The only thing better than fajitas? Sheet pan fajitas! 

These 21 Day Fix Sheet Pan Fajitas come together in no time at all. They also make for some fantastic leftovers, which is super helpful when you don’t like meal prepping (RAISES HAND), but also like to have success on the 21 Day Fix. And, because you make these all in one sheet pan, you aren’t making a huge mess of your kitchen.

You can have this dinner prepped and on the table in 30 minutes. Or, you can marinate the meat ahead of time in some olive oil and the spices listed below for some extra flavor.

21 Day Fix Sheet Pan Fajitas

Use a three-quarter sized sheet pan with a rim instead of a smaller pan (you can use a smaller pan, but you might need two). This lets you spread out the veggies into a single layer so they can roast without being overcrowded (but as you can see by my picture below, ours were pretty crowded and they turned out fine).

Here is what you will need in order to make these delicious 21 Day Fix sheet pan fajitas. This is a super easy recipe that you can also make for Weight Watchers. The truth is, once you start making sheet pan dinners you won’t want to go back to cooking any other way! 

These simple fajitas use clean ingredients that the whole family will devour and you’ll feel good about getting something healthy on the table quickly and easily. 

  • 1 1/2 lb flank steak, sliced into thin strips
  • 3 large bell peppers (we used one red, one yellow, and one orange)
  • 1 large onion, sliced
  • 2 T extra virgin olive oil
  • 1 T ground cumin
  • 2 t chili powder
  • salt and pepper, to taste
  • Lime, sliced
  • 1/2 cup cilantro leaves, roughly chopped

You can serve these in corn tortillas, lettuce wraps, or eat it plain!

Here’s how to make these easy sheet pan fajitas: 

Preheat oven to 400F and line a large, rimmed baking sheet with foil or parchment paper. Set aside.

In a large mixing bowl, combine flank steak, peppers, onion, olive oil, cumin, chili powder, salt and pepper. Mix until everything is well coated.

Sheet Pan Fajitas Ready to Cook

Spread the steak and pepper mixture onto the prepared baking sheet and roast in pre-heated oven for 15-20 minutes, or until the steak reaches the preferred level of doneness and your veggies are soft and slightly caramelized.

Remove sheet pan from oven and sprinkle with fresh cilantro and a squeeze of lime. Serve on tortillas or with a lettuce wrap.

These 21 Day Fix sheet pan fajitas are the perfect dish for meal planning.

21 Day Fix Container counts, per serving (serving size = 1/6th of recipe):

  • 1 red
  • 1/2 green
  • 1 tsp
  • 1 yellow (if you add two corn tortillas!)

Weight Watchers points for sheet pan fajitas:

5 points per serving on all three plans. Make sure to add in points for whatever you use to serve up the fajitas. You can use corn tortillas for about 2-3 points on most plans for 2 tortillas, or use lettuce wraps for 0 points. You can also just eat them as is. Serve these fajitas up on a bed of lettuce for a delicious salad topping!
