I wish I could go back and make my young self eat veggies. I mean, I was really missing out! I love me some veggies as an adult, and I will take them steamed, sauteed, grilled or roasted…just feed me all the veggies. As much as I love them, though, it can be hard to get in my daily veggie requirements (in fact, I make this soup, without the cheese, every week now so I can easily get in a tasty cup of vegetables whenever I need it).

21 Day Fix Roasted Veggie Medley
You’re going to love all the different veggies you get to use in this – and how easy it is to make!
Ingredients:
Here’s how to make them (pin for later!):
Preheat oven to 425. Combine vegetables, oil and seasoned salt and toss well to coat. Spread out on two baking sheets. Roast 15 minutes, then toss. Rotate the pans if they are on different racks in the oven. Roast another 10-15 minutes.
Countainer counts: This makes six cups of veggies. I would consider one cup to be one green and one tsp.
