Hummus on a fresh tortilla is one of my favorite things to eat. We used to go to Central Market all the time, where they have homemade tortillas and hummus. We’d buy a bag of tortillas and as soon as we got in the car, I’d rip into them (still warm!) and dip them in the hummus.
The. Best.
Hummus is so versatile – it can be a spread on a sandwich, a dip, or even (in my daughter’s case!) lunch on its own. And it’s 21 Day Fix-friendly, too. So. what’s better than hummus and tortillas? 21 Day Fix pumpkin hummus and honey toasted tortilla chips, of course (this is a great party food…perfect for game day or get-togethers).

21 Day Fix Pumpkin Hummus
Serves: 6
This pumpkin hummus is mild and pumpkin-y (but not in an overbearing way!). If you like it hot, add some sriracha.
Ingredients:
- 3 cloves garlic, minced
- 1 15oz can pumpkin puree
- 1 T extra virgin olive oil or avocado oil
- 1 15oz can chickpeas, drained and rinsed
- 1/4 c fresh lemon juice (1 large lemon)
- 2 T tahini
- 2 T water
Ingredients for chips (one serving is 8 chips):
- 6 small whole wheat tortillas
- 1 T extra virgin olive oil
- 1 tsp honey
- salt, to taste
Directions:
Place chickpeas, pumpkin, lemon juice, tahini, cumin and two tablespoons water in a food processor.
Place garlic and 1 tablespoon olive oil in a skillet over low heat. Cook until the garlic sizzles (less than a minute). Transfer garlic to the food processor.
Process until smooth, stopping every now and then scrape the sides and the bottom of the processor as necessary.
Transfer to a bow, cover, and refrigerate. You can eat it right away, but giving it some time to cool and for the flavors to meld together makes it even better.
Tortilla chip directions:
Heat oven to 350.
Heat 1 tablespoon oil with 1 teaspoon honey for 10-15 seconds in the microwave.
Place tortillas in a single layer on a rimmed cookie sheet. Brush one side with oil and honey, then flip tortillas over and repeat on the other side.
Stack tortillas, and using a sharp knife, cut into eighths. Place in single layer on a cookie sheet. Sprinkle with sea salt.
Bake for 15-20 minutes, or until light brown (or desired crispiness). Keep a close eye on these, and check frequently. They’ll crisp up even more as they cool.
Serve warm or cool.

Sorry about that Ember! I actually made it without cumin. I originally made it with, and apparently didn’t take that out of the recipe. But when I have made it with cumin, it was just a teeny bit – I think maybe a teaspoon.
