Overnight oats are one of my favorite foods to prep. Mostly because they don’t involve actual cooking (win!). I always look forward to having them in the morning when I wake up, and I’m always glad I spent the five or six minutes necessary the night before to make them. This 21 Day Fix Carrot Cake Overnight Oats recipe from Chellie at Art From My Table is a real treat – and I have a couple of options you might try when you make them, too!
21 day Fix Carrot Cake Overnight Oats
I love adding a tablespoon of raisins. You can also use walnuts instead of pecans, if you prefer.
- ¼ cup rolled oats
- 1/3 cup unsweetened almond milk
- ¼ cup nonfat plain Greek yogurt
- 1 tsp honey
- 1 tsp chia seeds
- 1/8 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp vanilla extract
- 1 tbs shredded carrots, plus more for garnish if desired.
- 1 tbs chopped pineapple, plus more for garnish if desired
- 1 tablespoon chopped pecans (1/2 for the oats, 1/2 to use as garnish)
- 1 tablespoon unsweetened coconut chips or shredded coconut (1/2 for the oats, 1/2 to use as garnish)
- optional: 1 tablespoon raisins
Place oats, milk, yogurt, honey, chia seeds, cinnamon, nutmeg and vanilla in a mason jar or other container with a lid. Shake well. Remove the lid and add carrots, pineapple, pecans, coconut, and raisins. Stir. Cover, place in the fridge overnight. Before serving add extra carrots, pineapple, coconut, and pecans if desired.
I like to add an egg with my breakfast in the morning to get some additional protein in (you can hard-boil them in the Instant Pot in no time).
With overnight oats, you can make a few batches at a time. I usually don’t make more than two or three at a time, because I am weird about leftovers and eating food several days after it was prepared (I know, get over it, but there it is – I don’t feel this way about frozen food though, so go figure).

Nutrition
The container counts are a little tricky on this one, mostly because the amount of green, pruple and orange containers used is *so* minimal. So see my notes on that below.
21 Day Fix container counts (and remember to always calculate yourself – I hate to mess up, but sometimes it happens!):
- 1 yellow
- 1/2 red
- 1 tsp sweetener
- 1 tsp
- 1/16 green (see what I mean…hardly worth counting, but there it is!)
- 1/16 purple (unless you add the raisins, in which case I’d make it 1/2)
- 1/2 orange (really a tiny bit more because of the chia, but the chia is so minimal…I didn’t count it)
- 1/2 blue

Hi Heather! Just the almond milk. It’s really not enough to count as a teaspoon, but the measurements on this recipe are so wonky I was trying to keep it as simple as possible where I could!
I love carrot cake. I know how healthy soaked oats are for you, I just never get around to getting them ready the night before. I’m teaching my 5-year-old how to help out in the kitchen, this seems like a perfect recipe to let her take charge of and have a quick and easy breakfast she can grab and serve her little sister.
