When I moved to Texas, I learned that “salad” doesn’t necessarily have to include lettuce. Who knew! One of my first non-lettuce salad experiences was with my mother-in-law’s Corn Salad, which is amazing (but not 21 Day Fix-friendly, so I won’t be sharing it here until I can figure out a way to make it work).
The 21 Day Fix Grilled Corn Salad I’m sharing with you here is definitely “fixed” – but it’s so, so good…making it perfect for BBQs and get-togethers, because everyone will like it!
Something about grilling just brings out the best in veggies. And what I love about this recipe is that while corn is the star, it doesn’t use a ton of it – which means you aren’t using up all your yellows on corn (yay!).
21 Day Fix Grilled Corn Salad
Prep time: 10 minutes
Cook time: 20 minutes
Serves: 4 (serving size is about 1 cup)
If fresh corn is not in season, substitute 1 cup frozen sweet corn prepared according to package instructions.
Ingredients:
- 2 large ears fresh corn, husks and silk removed
- 2 teaspoons unsalted butter, melted
- 2 teaspoons extra virgin olive oil
- 1 medium red onion, halved and cut into thick slices
- 2 cups cherry or grape tomatoes
- ¼ c. fresh parsley, roughly chopped
- 3 tablespoons fresh lime juice
- sea salt and black pepper, to taste
Directions:
Brush corn with melted butter before placing corn on a pre-heated gas grill over medium direct heat, or indoors on a grill pan sprayed with non-stick cooking spray set over medium-high heat.
Toss the onions and tomatoes in olive oil. Season with salt and pepper. Wrap in foil and place on the grill next to the corn.
Cook corn until kernels are slightly charred, rotating one-quarter turn every couple of minutes until each side is done. Keep an eye on the tomatoes and onions until they’re grilled to your liking (for the pictures you see here, we grilled until the onions were soft and starting to get transclucent).
Remove vegetables from heat and slice kernels from cob with a sharp knife. Discard cobs and transfer onions and corn kernels to a large salad bowl and set aside.
Add fresh parsley, and lime juice to the bowl. Toss gently to combine. Serve immediately with your choice of main dish.
