Seeing all of the yummy fall food at stores, on blogs, and (obviously) on Pinterest has basically had me salivating all month. I need to prep my body for the major carb overload that will be happening next month (although I have some amazingly delicious 21 Day Fix Thanksgiving recipes coming that will help keep us all on track…gobble gobble). Thanks to this 21 Day Fix Fall Salad, I can enjoy light and fresh flavors that I’m sure to miss once the holidays roll around.
In all seriousness, I really do love salads. Maybe not as much as lasagna or pizza, but I still love them! They make me feel good, inside and out, and leave so much room for creativity. Who likes to be hunkered down in the kitchen following an extensive recipe when you’re just trying to make a quick lunch before heading out the door? Um, not me. I save that fun process for dinnertime 😉 The ease of making a salad is just so…appealing. And this is no exception.

21 Day Fix Fall Salad
Serves: 4
Ingredients:
4 cups spring mix
1 cup sliced pears
1 cup blackberries
1 cup sliced cucumbers
1/2 cup crumbled goat cheese
1/2 cup pecans
1 Tbsp extra virgin olive oil
2 tsp balsamic vinegar
Directions:
Mix together in large bowl, mixed green, olive oil, and balsamic.
Top with remaining ingredients and serve immediately.
Yup! That easy!
21 Day Fix Fall Salad
Ingredients
- 4 cups mixed greens
- 1 cup sliced pear
- 1 cup blackberries

Thanks for this recipe. I enjoy eating salads often and am going to try this. I like to add fruits to my salads but never would have thought to add pears. Pears are one of my favorite fruits too! And I just happen to have some in the fridge.
I love adding pear to salad…with a little goat cheese, it’s heavenly!
