It’s no secret I love a good brunch.  In fact, I think I’ve written about it before.  A few times.  Ok, maybe more than a few but –  hey! I freaking love brunch!  Those few glorious hours of the day where you can have eggs and potatoes (with a side of some other form of potato) and salad and appetizers and get your day-drink on without any judgement.  In fact, I think all of the above are highly encouraged 😉 These 21 Day Fix brunch recipes are a great way to start brunchin’, whether you’re hosting or bringing something to contribute to a potluck.  And these recipes are so good, your friends will have no idea just how healthy they all are.

21 Day Fix Brunch Recipes

 

These 21 Day Fix recipes are great for any brunch, and will impress your guests with style and flavor!

Crock Pot Southwestern Breakfast Casserole – 3/4 red, 1/8 green, 1 yellow, 1 blue (love this one because CROCK POT!)

Pumpkin Spice Protein Pancakes – 1 yellow, 1 1/4 red, 1/4 purple, 1 1/2 tsp 

Sheet Pan Sweet Potato Hash wtih Eggs – 1 yellow, 1/2 green, 1/2 red, 1 tsp

Pesto Asparagus Frittata with Goat Cheese – 1/2 red, 1/2 blue, 1/8 green, 2 tsp

Sheet Pan Breakfast w/ Brussels, Sweet Potato, & Bacon –  1 Red, 1 Green, 1 Yellow, 1tsp (I love sheet pan meals!  They efficiently cook everything at once and help minimize cleanup.  Oh, this recipe is 80 Day Obsession compliant, too!!)

Crock Pot Breakfast Casserole – 1 Red, 1 Green, 1 Blue

Instant Pot Quiche – 1 Red, 1/2 Green, 1/2 Blue (This quiche is FILLED with broccoli – I can’t get enough!)

Sheet Pan Sweet Potato Breakfast Hash CarrieElle.com

Cinnamon Bun French Toast Cups – 1/2 Yellow, 1/4 Red per cup (Gluten-Free & Dairy-Free!)

Sweet Potato Crab Cakes – 3 Red, 3 Yellow, 1/2 Green, 9 tsp per recipe (Crab cakes are a great addition to brunch – I can hardly keep them on the table!)

Make Ahead Southwestern Breakfast Casserole –  1/2 Green, 1 Red, 3/4 Yellow, 1 Blue, plus count any toppings (Make ahead casseroles are great because it will free up your morning a bit.  Spend more time with your guests than in the kitchen 🙂 )

 

Individual Potato Gratins w/ Cauliflower Sauce – 1 Yellow, 1/2 Blue, 1/4 Green

Butternut Squash Latkes – 1/2 Red, 1 Green, 1/2 tsp 

3 Cheese Zucchini Bake – 1 Green, 1 Blue

Garden Vegetable Frittata – 1/2 Green, 1/2 Blue (This is full of summer veggies, but you can use anything that’s in season and will be just as scrumpcious)

Cloud Eggs w/ Asiago & Chives – 1 Red, 1 Blue (My husband makes these like a pro, so they must be easy!  And oh-so-fancy…)

21 Day Fix Cloud Eggs

Cheddar & Chive Savory Waffles – 1 Yellow, 1/3 Blue

Low Carb Cauliflower Hashbrowns – 1 Green, 1/2 Red, 1 tsp (Shhhhh…don’t tell my mom!  She *hates* cauliflower, but she is going to *love* these)

Gluten-Free/Dairy-Free Blueberry Muffins – 1/2 Yellow, 1/2 Blue

Fajita Breakfast Casserole – 1 Green, 1 Red, 1.5 tsp (This recipe only serves 2, so you may want to try to double or triple up using the oven instead of your Instant Pot.  Sorry, IP lovers!)

Crustless Zucchini Quiche – 1/2 Red, 1/2 Blue, 1/2 Green, 1/2 tsp

Cider Glazed Sweet Potato & Apple Bake – 1 Yellow, 1/2 Purple, 1 tsp, 1 tsp maple syrup

Cheesy Bacon Breakfast Bites – 1 Red, 1/2 Green, 1/2 Blue

Breakfast Fried Rice – 1/2 Green, 1 Red, 1 Yellow, 1/2 tsp for coconut crystals – a natural sweetener

Make Ahead Sausage & Egg Casserole – 1 Red, 1 Yellow, 1 Blue, 1/2 Green

21 Day Fix Veggie Quiche

Air Fryer Pumpkin Spiced Apples – 1 Purple

Copycat Starbucks Egg Bites – 3/4 Red, 1/2 Blue per 2 egg bites

Gluten-Free/Dairy-Free Banana Bread – 1 Yellow, 1/2 Purple

Healthy Hollandaise Sauce – 1/2 Red, 1/2 Green, 1 1/2 tsp (This is so easy you can make it in your microwave.  And it holds up well in the fridge, so you can make it a few days ahead)

Sausage Gravy – 1/2 Red, 1/2 tsp oil, 1/3 tsp maple syrup (I don’t know which I love more: Hollandaise or sausage gravy?!? But both of these are delicious 🙂 )

2 Ingredient Peach Bellini – 1/2 Purple, 1 Yellow Treat Swap (Because Bellinis really are a brunch staple…aren’t they?)

Everything Bagel Goat Cheese Spread – 1 Blue, 1 Green (Let your guests nibble on apps while you finish up in the kitchen, or bring this to help the hostess feel less stressed about timing.)

Watermelon, Feta, & Blueberry Salad – 1/2 Purple, 1/6 Blue

Cucumber & Cantaloupe Salad – 1/4 Green, 1/4 Purple

Berry-Almond Salad w/ Strawberry-Goat Cheese Vinaigrette & Basil –  1 1/2 Green, 1 Purple, 1/2 Blue
