This is the perfect side dish for any occasion – the holidays (Thanksgiving, I’m thinking of you!), a BBQ, a potluck (or as we like to call it in Texas, a “Covered Dish”), or any dinner (this would pair perfectly with any protein). 

{updated: I’ve added Weight Watchers points at the bottom of this post!}

The mayonnaise-free dressing is tangy and bright, while the broccoli and pumpkin seeds are nice and crunchy (the perfect combo). Serve this dish chilled.

21 Day Fix Broccoli Salad with Turkey Bacon and Pumpkin Seeds

If you have the time, make this recipe the night before, because the extra time will allow the flavors to blend more thoroughly.

21 Day Fix Broccoli Salad

Prep time: 15-20 minutes
Chill time: 30 minutes to overnight

Serves 4

Ingredients:

Dressing:
3/4 c. Greek yogurt
1 T. honey* or one very small pinch Stevia powder
2 T. fresh lemon juice
1 T. fresh lemon zest
Salt and freshly ground black pepper, to taste

Broccoli Salad:
½ small red onion, outer skin removed and cut into thin slices
2 large heads fresh broccoli, tough stems removed, rinsed, and broken into florets
6 slices turkey bacon, cooked crispy and crumbled
¼ c. fresh parsley, chopped
Salt and freshly ground black pepper, to taste
1/4 c. toasted pumpkin seeds, unsalted – here’s a great spiced roasted pumpkin seed recipe

Directions:

21 Day Fix Broccoli Salad

Tip: To remove the harsh bite from the red onion, add slices to a bowl of water or white vinegar for approximately 15 minutes. Remove from liquid and pat dry before using.

To make the dressing, combine the Greek yogurt, honey, and lemon juice in a small bowl. Season with salt and pepper, to taste. Set aside.

Add the broccoli florets to a large, microwave-safe dish and add 2-3 T. water. Cover and microwave on high for 4-5 minutes, or until florets are crisp tender. (Check after 3 minutes and adjust cooking times accordingly).

Remove from microwave and drain excess liquid. Set aside, uncovered, and allow steamed florets to cool.

21 Day Fix Broccoli SaladIn a large glass or other non-reactive bowl, combine the red onion, broccoli, crumbled bacon, and fresh parsley. Toss gently to combine. Top with ½ Greek yogurt dressing and toss again until ingredients are thoroughly coated. Cover and refrigerate 30 minutes or overnight before serving. Cover and reserve remaining dressing, as well.

Toss chilled salad with remaining dressing right before serving, or serve on the side for those who prefer a little extra dressing.  Sprinkle with the toasted pumpkin seeds right before serving to keep them crunchy.

I hate the floating social media icons. They block the content, and there does not seem to be a minimize or hide button. Would it be so hard to maybe choose one side of your page to be advertising (including social media) and put it all there? Or put the floating icons over the ads? Or put your content in a frame with the ads and icons NOT blocking the text?
Not coming back here. Too frustrating and can’t read the recipe.
