Did you read that title?! 21 Day Fix BLTA Ranch tacos? It’s a throwback to my just-after-high-school days, when Taco Bell carried the BLT Taco of My Dreams (you can read the full story of my BLT taco love here). But I quit Taco Bell when they quit BLT tacos, so I’ve had to create them myself. Oh and in case you’re wondering, YES…BLTA does stand for bacon, lettuce, tomato, avocado. Bacon. tacos.
UPDATED: I added WW points to this recipe, too!
And then I had to create a Fix-friendly BLT taco recipe, which is what you see here. 🙂
21 Day Fix BLTA Ranch Tacos
Can I use bacon in my 21 Day Fix tacos?
Ummm, yes! Yes you can. Not “real” bacon, though. It must be turkey bacon. Sprout’s and Costco have my favorite, low-sodium, nitrate and nitrite-free brands.
(If you’re looking for non-BLT tacos, I can’t be your friend. JUST KIDDING. You can find a huge collection of taco recipes here).
OH OH OH! And these are suuuuper kid-friendly.
You really, truly, cannot go wrong with these. You can swap out ingredients, add extra bacon (turkey, of course), take off the avocado, add some cheese…whatevs! Here’s how I made these.
Serves: 4 (1 serving is 2 tacos)
This recipe is super simple to make for one, or two, or ten!
How do I make bacon tacos?
Easily, my friend. See below!
Ingredients:
- 16 slices turkey bacon
- 8 corn tortillas
- 1 head romaine
- 1 avocado, sliced
- 1 tomato, diced
- 1/2 cup homemade Ranch dressing (you can try this recipe or this one)
These BLT tacos are so easy to make…you can prep ingredients in advance and then throw them together when you’re ready to eat!
It doesn’t get any easier than these 21 Day Fix BLTA tacos!
21 Day Fix BLTA Ranch Tacos
Ingredients
- 16 slices turkey bacon
- 8 corn tortillas
- 1 head romaine
- 1 avocado sliced
- 1 tomato diced
- 1/2 cup Ranch dressing homemade
Instructions
- Prepare your turkey bacon to your liking. I make mine in a skillet, and I like it crispy!
- Stuff each tortilla with two slices of bacon (I cut mine in half), a handful of romaine, 1/8 avocado and 1/4 tomato.
- Serve with 2 tablespoons of Fix-friendly Ranch dressing as a dip or a sauce on your tortilla (this recipe = 1 orange for 4 tablespoons!).
Notes
Nutrition
Here are a few variations for you, too:
- Sub out the avocado for cheddar cheese.
- Sub out the corn tortillas for whoel wheat (just remember that whole wheat tortillas = 1 yellow each, while the corn ones = 1 yellow for TWO).
- Add a sugar-free salsa, like this one, to get some green in!
- Serve with roasted veggies on the side to up your greens.
- Serve on a romaine leaf and cut out the yellows altogether!
- Crisp up your tortillas and toss all the ingredients into a bowl for a deconstructed BLT salad (recipe coming soon…also y’all should know BLTs are my jam)
The 21 Day Fix program is always changing, and while I do my very best and never want to mess up, please always double check the container counts yourself. Sometimes/usally it’s late at night when I write these posts.
Container counts, per serving (serving size = 2 tacos):
- 1 red
- 1 yellow
- 1/2 green
- 1 blue
- 1/2 orange (if you use my Ranch recipe…adjust this if you use another, and don’t forget to take it off if you don’t use ranch!)
Enjoy these! 🙂 And I have more taco recipes for you below, too!
